What is chorizo con huevos?

Chorizo con huevos is a traditional Mexican breakfast dish made by cooking Mexican chorizo until it’s crisp and flavorful, then mixing it with eggs. It’s a beloved meal because:

  • It’s quick to make – ready in about 15 minutes.
  • It’s packed with protein – getting your day off to a solid nutritional start.
  • It’s easy to customize – we’ll share more on that later.
  • It’s made using simple, affordable ingredients.
  • It scales well – you can half the recipe to serve 2 people or double or even triple it to feed a crowd!

What is chorizo sausage?

Chorizo sausage is a flavorful, spiced sausage that you’ll find in many Spanish-speaking countries such as Spain, Mexico, and Argentina, although the varieties are very different.

Mexican Chorizo, which we use for this recipe, is a fresh sausage made from ground pork that’s seasoned with vinegar, chili peppers, paprika, garlic, and more, giving it a bold, vibrant, and slightly spicy flavor.

Spanish Chorizo, on the other hand, is a dry-cured, fermented sausage made from pork and heavily seasoned with smoked paprika (pimentón), garlic, and salt. It has a firmer, sliceable texture and can be eaten as-is, similar to salami.

Argentinian Chorizo is a richly seasoned pork sausage that is typically made with garlic, paprika, oregano, salt, and red wine vinegar.

You will also occasionally find Green Chorizo, which is made with cilantro, green chilis, parsley, and more, giving it a fresh, slightly herbaceous, and spicy flavor. Other versions come from all over Central & South America, as well as the Philipines!

How do you recommend serving chorizo con huevos?

You can serve your chorizo con huevos on their own, you can fancy them up, or you can use them as an ingredient. If you want to use the chorizo con huevos as part of a larger dish, here are some suggestions:

  • Serve it taco-style, and spoon the mixture into tortillas and top with your favorite salsa.
  • Make a breakfast bowl by serving the chorizo con huevos over rice or potatoes with beans on the side.
  • Enjoy a breakfast burrito by rolling up the chorizo con huevos in a flour tortilla with cheese and salsa!

For our recipe, we recommend putting some freshly chopped green onions on top to brighten up the flavors, but the dish is fine without the green onions. Here are a few other garnishes / toppings you can add to your chorizo con huevos:

  • Avocado slices
  • Cilantro
  • Cheese (Mexican queso fresco or American shredded cheddar are both fine!)
  • Diced onion
  • Salsa (green or red)
  • Sliced jalapeños for spice

Are there any tweaks I can make to this chorizo con huevos recipe to personalize it?

In addition to the serving suggestions we provided above, there are a few tweaks to the recipe you can make to adapt the chorizo con huevos to your taste:

  • Try sauteeing yellow onion or bell peppers along with the chorizo sausage for more nutrients and flavor.
  • Wilt in a bit of spinach at the end of the cook for a burst of green color in the finished dish and to enjoy the benefits of nutrient-rich spinach.
  • Substitute our Green Chili Chorizo (when it’s available) for our standard Mexican-style Chorizo to add a more roasty, herbaceous flavor to this dish.
  • Mix the chorizo with ground beef or ground pork to produce a mild version of this dish or…
  • Add in a small can of chipotle peppers in adobo sauce to spice up the dish!

Ingredients

  • 1 lb Leahy’s Chorizo Sausage (removed from casing if applicable)
  • 8 Egg
  • 2 Tbsp Milk (optional – makes for fluffier eggs)
  • 1 tsp Salt (or to taste)
  • 1/2 tsp Black Pepper (or to taste)
  • Green Onion (diced for garnish – optional)

Directions

  1. Heat a large skillet to medium-high heat and add the chorizo. Cook for about 6 – 8 minutes, breaking the sausage up with a spatula as it cooks, until the chorizo is browned and slightly crispy. Once the chorizo is cooked, drain the excess grease from the pan.

  2. While the chorizo is cooking, whisk the eggs, milk (if you’re using milk), salt, and pepper in a bowl until well combined.

  3. Reduce the heat of the skillet to medium-low and pour the egg mixture over the chorizo. Let it cook undisturbed for 30 seconds, then gently stir with a spatula.

    Continue stirring and cooking for another 3-4 minutes until the eggs are just set but still soft.

  4. Once the eggs are cooked, remove from heat, and garnish with green onions, or any of the other suggestions we provided above.
