Congratulations on bagging your deer! Lake Geneva Country Meats is happy to offer deer processing and sausage making services for hunters.

2024 – 2025 Acceptance Schedule
Due to increased domestic animal processing volume, we are adjusting our wild game processing schedule. Our current schedule is:
- We will accept fresh or frozen cleaned, boneless venison trim in clear bags starting Monday, September 23rd, and we will continue to accept this trim until at least February 1st. Turnaround time will be based on our domestic animal schedule.
- We will accept a limited amount of skinned & quartered deer carcasses (no whole carcasses) starting Monday, September 23rd, based on our storage capacity for deer. Please call to check if space is available before bringing your quarters.
- We will accept a limited amount of full deer carcasses between November 25th and December 7th. Please call to check if space is available before bringing your carcasses.
- Please call and check about our availability for processing other types of animals.
- Our general wild game drop-off and pickup hours are Mon – Fri 9:00 to 4:30, Sat 9:00 – 2:30, with no drop-off or pickup on Sundays.

2024 – 2025 Pricing & Further Policies
PERFECTLY TRIMMED MEAT
When you drop your whole deer carcass off, we’ll inspect it for damage, cut out any damaged meat, then trim it as you like.
We’ll wrap, box and freeze the cuts you want, and set aside trimmings for sausage. We use our normal meat cutters and our butcher grade equipment, so you’re guaranteed professional results.
DELICIOUS SAUSAGE
We’ll make sausage from your deer using the same expert techniques we use for our retail products. We make a wide variety of sausage products with no minimum quantities.
In order to do this, we mix trim from all of the trim we receive. We do this to allow everyone the widest variety of choices, and to facilitate efficient production.
We understand you care about the quality of your trimmings, and we rigorously inspect trimmings as they are brought in to make sure that all trim we accept is of a similar high quality.
We will reject any trim that smells bad, looks bad or does not fit our guidelines.
We will not make single batches of sausage from your own trim.
When you bring your trimmings, we ask that you follow these guidelines:
- It is freshly trimmed and kept at refrigeration temperatures for fewer than 3 days
- It was frozen immediately after trimming and kept frozen
- It is clean and free of debris
- It is brought in clear plastic bags – not a non-food container or a plastic garbage bag
- You have a proper registration tag
