The finished product is easy to serve on tortillas as a burrito filling, with chips for dipping or even in a lettuce wrap. There are plenty of ways to customize this recipe to your own taste – you can add spicier peppers like a jalapeno or use spicy salsa to spice the recipe up, or you can stir in even more veggies like frozen corn and fresh chopped lettuce if you like. - 1 Leahy’s Angus Ground Beef
- 2 Bell Pepper (your choice of colors)
- 1 Onion (diced)
- 1.5 cup(s) Water (diced)
- 1 cup(s) Rice
- 1 cup(s) Salsa (uncooked)
- 2 Tbsp Taco Seasoning
- 1 cup(s) Shredded Cheese
In a large skillet, cook the ground beef, peppers and onions over medium-high heat, stirring occasionally, until the ground beef is browned, about 10 minutes. Drain off the fat.
Add the water, rice, salsa and taco seasoning and stir together. Heat until the mixture is boiling, then cover the skillet, reduce heat to low and let simmer until the rice absorbs the water and is cooked, about 15 minutes.
Once the rice is done cooking, sprinkle with the cheese and serve. Enjoy!
