No worries! You can easily make your own hot honey by mixing ¼ cup of regular honey with a teaspoon of your favorite hot sauce or chili flakes. Adjust the spice level to your liking, or omit the heat entirely if you prefer a sweeter flavor.
You can marinate the chicken for as little as 20 minutes, while you’re getting the grill hot. You can also bring out more flavor by letting it sit in the marinade for at least 2 hours or overnight. For meal prep purposes, you may want to make the marinade in the morning, let the chicken sit during the day, and grill when you get home at night!
Yes, if you don’t have access to a grill, you can bake the chicken thighs on a sheet pan in the oven. Preheat your oven to 400ºF and bake for about 25 minutes, or until the internal temperature reaches 160ºF. Broil for the last few minutes to achieve that nice caramelized exterior.

In a large bowl, whisk together Dijon mustard, hot honey, apple cider vinegar, minced garlic, salt, and pepper. Add the chicken thighs to the bowl and toss until well coated. Cover and refrigerate for at least 20 minutes, or up to overnight for more flavor.
