Halibut with Asparagus and Olive Caper Sauce Recipe

This fresh and light Mediterranean-style dish will remind you of relaxed summer nights by the sea. Halibut is a delicious white fish with a firm, meaty texture and it is perfectly complimented by the simple but flavorful sauce and steamed asparagus. Ingredients

  • 2 piece(s) Halibut (about 8 oz each)
  • Salt
  • Pepper
  • 4 Tbsp Butter
  • 2 Tbsp Olive Oil
  • 2 Tbsp Butter
  • 1 Shallot (finely chopped)
  • 1 clove Garlic (minced)
  • 4 Tbsp Green Olives (pitted and finely chopped)
  • 2 Tbsp Capers
  • 2 Lime (juiced)
  • 1 Orange (juiced)
  • 2 Tbsp Fresh Baby Dill (finely chopped)
  • 1/2 bunch Asparagus (trimmed)
  • Lime (cut into wedges for serving)

Directions

  1. Heat oven to 425ºF and season the halibut with salt and pepper to your taste.

  2. Heat 4 tbsp. butter in an ovenproof skillet set over medium-high heat. Once the butter is melted, place the fish in the skillet, and transfer to the oven. Bake for about 7 to 8 minutes, or until fork tender.

  3. While the halibut is baking, prepare the sauce. To make sauce, heat olive oil and 2 tbsp. butter in a small skillet and sauté the shallot and garlic for about 2 minutes. Stir in green olives, capers, lime juice, orange juice, and dill, and season to taste with salt & pepper. Remove from heat and set aside.

  4. Blanch asparagus in boiling salted water until just tender (2 to 3 minutes), then drain.

  5. Serve halibut fillets drizzled with the sauce and the asparagus on the side. Have lime wedges available for serving to bring an extra squeeze of bright flavor to the dish. Enjoy!
