This Mediterranean inspired dish is a simple way to have a shrimp dinner complete with carb and vegetables on the dinner table in 30 minutes. There are plenty of ways you can customize this dish to your own taste. Try adding extra veggies, using more fresh herbs or including a bit of tomato sauce to richen the dish. In a large skillet, heat the olive oil over medium-high heat. Add onion and garlic to the skillet and cook until the onions are soft.
Once onions are soft, add the orzo and cook for one minute. Then add chicken broth, yellow pepper, green beans and Old Bay seasoning. Bring the mixture to a boil, then reduce heat to a simmer and cover the mixture. Let cook for about 20 minutes until the orzo has absorbed the broth.
Once the orzo is cooked, add the shrimp and continue to cook the mixture until the shrimp is warmed.
Serve the mixture with the basil as a garnish. Enjoy!
