Skip the mess and make dinner ahead of time with this Asian Beef and Vegetable recipe you can make in your slow cooker! This easy recipe comes to us from the Beef Council and is a great way to make use of stew meat without doing the same old “meat, potatoes and veggies.” Try it and let us know what you think of the recipe. Add stew meat, coconut milk, raisins, curry powder and salt to your slow cooker. Stir all the ingredients together, cover the slow cooker and cook on low for 7 hours.
After 7 hours, add frozen vegetables to mixture, stir to mix, increase heat to high and cook for 1 more hour or until the vegetables are tender.
Once vegetables are tender, serve the beef and veggies over rice or couscous and enjoy!
