Add the butter to a large skillet and put over medium heat. When the butter is melted, add the garlic and sauté until the garlic is soft. Season the befe tips with salt and pepper to your taste and add to the skillet. Cook until browned.
When the beef is browned, add the sliced mushrooms and cook until the mushrooms are soft.
Once the mushrooms are soft, add the flour to the pot and stir to coat beef and mushrooms. Pour in the beef broth and mix, scraping up any flour or beef bits that have stuck to the bottom of the skillet into the liquid.
Add the egg noodles, and bring the liquid to a boil. Once the mixture reaches a boil, reduce heat and allow mixture to simmer for about 10 minutes, until the noodles have absorbed most of the liquid and are tender. Add more liquid if necessary.
Once the noodles are tender, stir in the sour cream to the mixture. Serve a plate of bowl full of the entire mixture of noodles, beef, mushrooms and sauce. Garnish with fresh chopped parsley, if desired. Enjoy!
