This Crustless Quiche recipe is an easy to make twist on the classic dish. A quiche without a crust is just as tasty, faster and easier to make. We love the simplicity of this recipe because you can easily make this recipe with kids of all ages. While this recipe uses Italian sausage, spinach, tomatoes and cheddar cheese, you can put almost any kind of veggies or meat in your quiche. Bacon, shredded chicken or ham all work great. Sliced tomatoes, broccoli, caramelized onions and leeks are also all perfect ideas for fillings. What’s your favorite quiche filling? Let us know in the comments!
Lightly grease a 9″ pie pan with olive oil. Place the spinach, tomatoes, and cooked sausage in the pan.
In a medium sized bowl, whisk together the eggs, milk, salt, pepper and nutmeg. Pour the mixture over the veggies and sausage in the pan.
Sprinkle the top of the quiche with the shredded cheddar cheese then place in a preheated 375 degree F oven and bake for 20 minutes. The center of the quiche should be firm and not wiggle when touched.
Once done cooking, remove the quiche from the oven, and allow it to cool for 5 minutes then slice and serve!
