Here’s a spicy Caribbean style chicken dish that you can enjoy at home when you’re looking for something different than your normal menu rotation. This dish was inspired by a recipe featured on the Urban Accents Jamaican Jerk BBQ seasoning that we use in the recipe. It packs a punch, but has a touch of sweetness from the fresh juices to balance off the spiciness! Serve with rice and fresh greens or fruit and enjoy!
Add all ingredients except chicken in a small bowl and mix until combined. Put chicken into a ziplock bag or bowl and pour marinade on top of the chicken. Make sure all surfaces of the chicken are covered.
Place the chicken on a rack over a roasting pan and pour remaining marinade from the bowl on top of the chicken. Place chicken into an oven preheated to 400°F and bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F.
If desired, while the chicken is baking, you can make another, separate batch of the marinade, using the same ingredients. Pour this batch into a saute pan, bring to a boil and then reduce heat to a simmer and reduce by half. Use this as a sauce on top of your chicken once baked. Do not use marinade that has touched raw chicken for this purpose!
Remove chicken from oven, let sit for 5 minutes and then slice into pieces for serving. Enjoy!
