Perfect for Cinco de Mayo or any other party occasion, our Chorizo Bite recipe delivers a delicious spicy appetizer in a convenient red potato shell. Simply boil and scoop red potatoes, and then fill them with a delicious mixture of our spicy Chorizo sausage, green onions, sour cream, cheese and potato. Bake and they’re ready to enjoy. Trust us, they’ll be a big hit at your next party, and kids will love them!
The night before making this recipe, place potatoes in a large pot, cover with water, and boil until fork tender. Remove from water, pat dry, and let them cool in the refrigerator overnight. You can do this step the same day, but the potatoes are easier to scoop if they have cooled overnight.
Cut potatoes in half, and scoop out the inside of the potatoes, leaving just a shell. Transfer innards to a mixing bowl. Place shells on a baking sheet.
Cut the casing away from the Chorizo sausage, and put remaining sausage in a frying pan. Fry until brown.
Combine Chorizo sausage, 1/4 cup cheese, sour cream, hot sauce, green onion, and garlic with the potato innards in the mixing bowl.
Mix until thoroughly combined and season with salt and pepper to taste.
Stuff each potato shell with the stuffing mixture until they are filled until over the top of the shell. Garnish with remaining shredded cheese.
Put the baking sheet with the Stuffed Chorizo Bites in a n oven preheated to 350F and bake for 10-15 minutes, or until golden brown on the top.
