Alright, we know we’re biased, but we think our chorizo sausage is some of the absolute best chorizo sausage around – in fact, it’s won a number of awards at the Wisconsin Cured Meat Championships! While there are many recipes you can make with chorizo sausage, one of the easiest ways to use this tasty sausage is to make chorizo sausage tacos. Seriously, these tacos are incredibly easy to make and super tasty. They actually take less work than ground beef tacos (since the meat is already seasoned) and have incredible flavor. If you haven’t had chorizo sausage tacos, you need to make some ASAP!
Our chorizo sausage is made in a Mexican-style and comes in long ropes that are easy to cut open and use the meat inside for chorizo sausage tacos. The sausage is made from all pork and seasoned with red pepper, paprika, cumin, garlic and many other spices. It’s well seasoned and has a good spice without being burning hot. What really sets it apart and gives the sausage some zing is the vinegar we add to the sausage. It brightens up the flavor and gives the sausage a unique texture.
We’ve topped this our chorizo sausage tacos with simple, street taco style toppings – white onion, cilantro, and queso fresco and a squeeze of lime juice on top. While this is an authentic way of topping the chorizo sausage tacos, there is absolutely nothing wrong with loading up these tacos with American style toppings like lettuce, salsa, and shredded cheese. The great thing about a taco is that you can top it the way you like, and there’s absolutely nothing wrong with that!
Another stylistic choice for your chorizo sausage tacos is to pick your favorite tortilla. We chose to use small flour street-style tortillas because these feel like a street-style taco to us. We warmed them on our stovetop and doubled them up to hold plenty of toppings. You can definitely use normal sized tortillas, corn tortillas, hard shells or even homemade tortillas – whatever your prefer!

Cut open the chorizo sausage and remove the ground meat from the casing. You can do this by making one long cut down the top of the casing and pulling the meat out through the cut. Discard the casing once you remove the meat. Add the vegetable oil to a medium sized non-stick skillet and heat to medium high heat.
Once the pan is hot, add the chorizo sausage and cook until the meat is browned and cooked through. While the meat is cooking, use a wooden spoon or spatula to break up the meat into small crumbles.
Once the meat is browned, use a slotted spoon to remove the meat from the pan. Place it on a paper towel lined plate and blot away any remaining grease on the top of the meat.
Assemble your chorizo sausage taocs by putting the cooked chorizo on your choice of tortilla, then top with a few diced onions, a sprinkle of queso fresco, some freshly chopped cilantro, and a squeeze of fresh lime juice. Enjoy!
