Curry chicken is one of the most popular dishes in Indian cuisine. It is a hearty, flavorful and easy to make dish for your family dinner! Traditionally it is served with rice or naan, but our Keto friendly curry chicken can be served with a side of yogurt, or as a bowl to fit with your diet. The key spices for this dish are the curry powder and garam masala, so if you don’t have the other seasonings, no need to worry, they can be skipped, but they do add a layer of complexity that we enjoy.

Ingredients

  • 1.5 lb LGCM Boneless Skinless Chicken Breast
  • 1 cup Greek Yogurt
  • 2 tsp Garam Masala
  • 2 Tbsp Butter
  • 1 Onion (cut into large pieces)
  • 2 Carrot (cut into chunks)
  • Ginger (3″ knob)
  • 3 clove Garlic (grated)
  • 1.5 Tbsp Curry Powder (minced)
  • 1 tsp Cayenne Pepper
  • 1 tsp Turmeric
  • 2 tsp Coriander
  • 4 Tbsp Tomato Paste
  • 7 oz Coconut Milk
  • 1 cup Chicken Broth (about half a can)
  • 1 Lemon
  • Cilantro (juiced)

Directions

  1. Cut the chicken breast into pieces big enough for one large bite. Put the pieces of chicken in a large bowl chicken, then add the yogurt and garam masala. Mix together, then cover and let sit in the refrigerator for 1 hour.

  2. Add the butter to a soup pot and heat to medium heat. When the butter is melted, add the onion and carrot. Cook for 4 minutes, then add the ginger and garlic. Cook for one more minute, then add the remaining spices and mix together.

  3. Add the tomato paste, coconut milk, and chicken broth to the pot. Mix together. Bring to a boil, then reduce heat to a simmer and add the chicken to pot. Cover and cook for 40 minutes, stirring halfway through the cooking process.

  4. After 40 minutes, taste the broth and season more to your taste. Add the lemon juice, stir, and serve. To serve, ladle a mix of the broth and chicken into a bowl, and garnish with a sprig of cilantro. Place a scoop of yogurt on top, if desired. Enjoy!
