One of our most popular deli items are our stuffed peppers. Made by hand with fresh ingredients, we can hardly keep these in stock when we put them in the deli case! After many requests, here is our recipe to make these at home. Have fun making them and tell us if you make any additions or tweaks by leaving a comment below!

Ingredients

  • 1 lb Leahy’s Angus Ground Beef
  • 6 Green Bell Pepper (medium to large)
  • 2 cup Tomato Sauce (tops cut off and middle part removed)
  • 1 cup Yellow Onion
  • .5 cup Brown Rice (chopped)
  • .5 cup Mozzarella Cheese (uncooked)
  • .5 cup Water (shredded)
  • 1 tsp Worcestershire Sauce
  • Salt
  • Pepper

Directions

  1. Heat a large saute pan over medium-high heat and add the ground beef and onions. Lightly season the mixture with salt and pepper.

  2. Cook until the ground beef is browned, and then drain any grease from the pan.

  3. Reduce the heat to medium, and add the tomato sauce, Worcestershire, rice and water and let the mixture simmer for 15 minutes. You may have to reduce the heat to medium-low to keep the mixture simmering and not at a rolling boil.

  4. While the mixture is simmering, bring a large pot of salted water to boiling and then place the peppers in the pot. Cook for 5 minutes at boiling.

  5. Remove the peppers from the boiling water, pat dry, and stuff with the ground beef and rice mixture. Garnish with the cheese.

  6. Enjoy!
