This is not your childhood Mac and Cheese. This is freshly made, fully flavored, absolutely delicious Mac and Cheese with chunks of delicious Italian sausage in it. The best part? It’s super easy to make and clean up because you only use one pot to make this dish. If you don’t like Italian sausage, you can make this recipe using plain pork sausage, or customize it by using meat from any of our Leahy’s Sausages! Just cut the casing open, take out the bulk meat and use it instead of the Italian sausage. Did you customize this recipe? Let us know what changes you made in the comments below!
In a large pot, cook the Italian sausage until browned. Drain off any grease.
Add the diced peppers, onion, macaroni, marinara sauce and water to the pot. Bring the mixture to a boil, then reduce heat to a simmer and cover the pot. Simmer for about 20 minutes until the macaroni is tender and has absorbed most of the water. Stir the mixture occasionally, and if necessary, add more liquid to help the macaroni cook.
When the macaroni is tender, add in the half and half and cheese. Mix everything and cook until cheese melts.
Serve with grated parmesan cheese and Italian seasoning on top. Enjoy!
