Beef brisket is a wonderful treat for a party – and oven roasted beef brisket is the quick and easy way to enjoy brisket!

We love firing up the smoker and doing a 12 hour cook to turn out a whole beef brisket that’ll feed 20 people. However, sometimes you don’t have 12 hours to cook a brisket, or you aren’t feeding 20 people, or maybe you don’t have a smoker! In those cases, this Oven Roasted Beef Brisket recipe is a great way to make a delicious brisket!

We really enjoy making this oven roasted beef brisket recipe for small gathering of about 10 people. You’ll end up with slices of juicy, and delectable beef brisket that can be served on your favorite buns as bbq beef brisket sandwiches. If you want to serve an entire BBQ spread of meats cooked inside, you can serve the slices of briskets with slow cooker baby back ribs or slow cooker pulled pork!

One way you can add smoked flavor to this recipe is to add a few dashes of liquid smoke into the cooking liquid. We don’t love liquid smoke, as we think it tastes artificial, but it is an option.

Instead of using liquid smoke, we prefer to add smoky flavor by using a rub on the meat. Try using a BBQ rub with coffee grounds to bring some smoky notes to the meat, or if you like a bit of spice, use a rub that uses smoked peppers. I love this Dark & Smoky BBQ rub from Flatiron Pepper for this purpose! We wrote this oven roasted beef brisket recipe with just a salt & pepper seasoning, but you can use your favorite BBQ rub or one of the suggestions above!

One last note about this oven roasted beef brisket recipe before we give you all the ingredients and instructions – we are writing this recipe to use a 4 – 6 lb. brisket flat. Brisket flats are leaner and smaller than whole briskets, so they cook faster, but also require more moisture to keep them from drying out while cooking since they don’t have as much fat as a whole brisket to keep them juicy.

By cooking in an oven and using a liquid filled roasting pan, we can control the temperature precisely and cook in a moisture rich environment. This is the perfect scenario for brisket flats and why we use them in the oven roasted beef brisket recipe instead of a whole brisket. They’re also smaller and will fit more easily in your oven!

Ingredients

  • 5 lb Brisket (flat piece)
  • Water (or beef broth if you prefer)
  • 2 Tbsp Kosher Salt (we prefer Diamond Crystal brand!)
  • 2 Tbsp Black Pepper

Directions

  1. In a small bowl, mix together the kosher salt and black pepper. Evenly season the brisket on all sides with this mixture or your favorite spice rub. We provided some suggestions in the recipe notes to help bring smoky flavor to your brisket!

  2. Take a roasting pan with a rack that’s large enough to fit the brisket and pour enough water into it to have about 1/2″ of liquid in the bottom. Place the brisket on the rack, then cover with aluminum foil.

  3. Put the brisket into an oven preheated to 350ºF and then reduce the heat to 300ºF. Cook for about 3 hours, or until the brisket reaches an internal temperature of 200-205ºF or is fork tender.

    We highly recommend cooking to temperature, not time. You can use a remote temperature probe like this one to monitor the brisket as it cooks!

  4. Once the brisket is done cooking, remove it from the oven and let it rest (still covered in foil) for at least 30 minutes. After resting, slice the brisket into thin slices, being sure to cut across the grain of the meat.

  5. Serve the oven roasted beef brisket slices either on top of buns with BBQ sauce as BBQ beef sandwiches, or serve the slices as part of a BBQ meal with white bread, pickles, onions, and all of your favorite sides like baked beans, coleslaw, and cornbread. Enjoy!
