Cornish Game Hens are a supremely simple dinner for 1 or 2 people to enjoy together or an excellent dish to serve at a dinner party. Presenting each guest with an individual whole chicken is an impressive display that takes very little work to prepare. Our Roast Cornish Game Hen recipe is a straightforward way to prepare these small (about 2 lbs. each) birds in your oven with traditional seasonings. You can season each bird to your own taste – try using different herb combinations, using Cajun seasoning or filling the bird with your favorite stuffing!
Rub the outside of each hen with olive oil and then season the birds with Herbes de Provence, salt and pepper to your taste. Place a sprig of rosemary and 2 cloves of garlic in the cavity of each bird and place the birds on a roasting pan.
Roast the birds in an oven preheated to 400ºF for 45-60 minutes until the internal temperature of the birds is 165ºF. Once they are cooked, remove from oven and let rest 5 minutes before serving. Remove rosemary and garlic from cavity before serving. Enjoy!
