When we made this recipe, we really enjoyed the roasted sweetness of the apples combined with the bite of the onion and cabbage. This is a recipe made with lean pork, as well as the vegetables and fruits, so is a great way to feed a balanced and healthy meal to your family. Enjoy and happy fall!

Ingredients

  • 3 lb LGCM Boneless Pork Loin Roast (leave netted)
  • LGCM Ultimate Pork Chop and Roast Seasoning
  • 3 Apple (red)
  • 2 Yellow Onion (cored and cut into wedges)
  • 1/2 head Red Cabbage (sliced)
  • 10 Red Potatoes (sliced)
  • 1 cup Beer (halved)

Directions

  1. Liberally season all sides of the boneless pork loin roast with LGCM Ultimate Pork Chop and Roast rub.

  2. Add beer (or apple juice / chicken broth), then red potatoes, then pork, then onions, cabbage, and apples to the slow cooker. Cover and cook on low for 8 hours.

  3. Once done cooking, remove the boneless pork loin roast from the slow cooker and take off the netting. Separate the two halves and slice each half into thin slices. Serve all the ingredients together, seasoning with salt and pepper to taste. Enjoy!
