Aren’t slow cookers great? You throw a bunch of ingredients in and a few hours later you have a delicious meal! This easy to make recipe uses a plain Boneless Skinless Chicken Breasts, some fresh veggies, marinara sauce and the magic of a slow cooker to make a scrumptious Italian flavored meal. There’s lots of room to customize this meal to your specific taste by changing the type of marinara sauce you use. If you like more garlic, use a garlic marinara! Layer half the pepper and onion strips on the bottom of the slow cooker. Place the chicken on top and season with garlic powder, salt and pepper. Add remaining peppers and onions and then pour in red wine and marinara sauce. Cover and cook on high for 4 hours.
Once done cooking, shred the chicken breast in the sauce. Once the chicken is shredded add in bread crumbs to the slow cooker (omit for a thinner sauce.) Stir together the contents of the slow cooker until the bread crumbs are absorbed by the sauce.
Serve the Italian Chicken and Peppers over freshly made pasta. Top with grated Parmesan and Italian seasoning. Enjoy!
