We polled our staff for new recipes that use beef stew meat and we love this recipe that Angie suggested. When we tested this recipe, some of our Meat Ambassadors called this recipe a chili and others called it a stew, but they all called it DELICIOUS! This is an easy slow cooker recipe that will spice up your normal beef stew by using chili powder and our Reichert Taco seasoning. It’s not too spicy – it just has a nice low burn to it – but if you would like to keep it less spicy, you can cut the chili powder and taco seasoning in half. Put beef, tomatoes, onions and chili powder in your slow cooker. Mix them together, cover and cook for 7 hours on low.
After 7 hours, add in corn, black beans and taco seasoning. Mix together, cover and cook for 1 hour on high.
Serve on rice with shredded cheese and fresh cilantro for garnish. Other suggested toppings include sour cream or hot sauce. Enjoy!!
