This recipe was made by Mallory, our summer intern and it’s absolutely delicious! She says, “My favorite thing to eat in the morning is a nice plate of scrambled eggs with sausage. I top the plate with fresh avocados and shredded cheddar cheese. Unfortunately, I don’t always have time to sit down and eat, and I have to take breakfast with me in the car. I’ve tried bringing the plate with me in the car, but that doesn’t work as well as I would like it to work! That is why I make breakfast burritos. They are a super simple way to eat all of your favorite breakfast items on the go and all rolled up in a tortilla for less of a mess.” So what do you think of our Taco Bratwurst Breakfast Burrito recipe? Using a taco brat gives the burrito a little extra kick with the taco seasoning and jalapeño peppers in the bratwurst, so you can feel free to substitute other sausages. Ingredients

  • 4 Flour Tortillas
  • 4 Egg (scrambled to your taste)
  • 1 Avocado (diced)
  • 1 Tomato (diced)
  • 2 LGCM Taco Bratwursts (meat removed from casing (substitute .5# other sausage if desired))
  • 1/2 cup Shredded Cheddar Cheese
  • 2 Tbsp Salsa (more or less to taste)
  • Vegetable Oil

Directions

  1. Heat a non stick skillet over medium heat and add canola oil once the pan is hot. Cook bratwurst meat until done.

  2. Assemble the burritos as follows: first, microwave tortillas for 15 seconds so that they are pliable. Remove from microwave, and  lay down the eggs, then sausage, then avocado and tomato, top with cheese. Add salsa or hot sauce if desired.

  3. Once burrito is assembled, wrap up the burrito tightly. Heat a small amount of oil in a clean pan to medium heat and then cook the burrito for 15-30 seconds per side to seal the edges. Enjoy!
