About Pork Chops

Weekly Sales at Lake Geneva Country Meats

All pork chops are cut from the flavorful and tender center part of a pig. This area is known as the loin. From this area, we can cut the chops many different ways. Here’s an explanation of the different pork chops you can find at Lake Geneva Country Meats.

Butterflied Chops: these are a thick boneless pork chop that we slice halfway through and then open up like a book. They’re great on the grill, or can be stuffed, tied up, and cooked for a special treat. —

New York Chop: these boneless pork chops are simple, easy to cook single serve chops. They’re easy to marinate, cook, and let your crew take as many as they want! —

Rib Chop: this bone-in pork chop (available in 1/2″ or 1″ size) comes from the part of the loin that’s closest to the front shoulder of the pig. The meat is darker, richer, and more flavorful than loin chops. They look just like a beef rib steak, and cook like them too! —

Iowa Chop: Iowa chops are a super sized version of a rib chop. We use the richest portion of the rib for these for the biggest pork flavor, and cut at 2″ thick, they’re a treat for pork lovers. We recommend reverse searing these to cook them all the way through! —

Loin Chop: these pork chops are just like a beef T-Bone steak. They have lean but flavorful pork meat on one side of the bone (the same meat you get in a boneless pork chop) and a bit of pork tenderloin on the other side. They’re available in 1/2″ or 1″ size and are our most popular type of pork chop.
