Coffee Crusted Pork Roast

We love coffee, and we love pork. When you put the two together, you get this amazing recipe based on a recipe from the Pork Council. Pork Loin Roasts are conveniently sized for families of 3 or more, certified lean, and easy to slice for serving. They also make for great leftovers the next day! Ingredients

  • 3 lb LGCM Boneless Pork Loin Roast
  • 1.5 Tbsp Ground Coffee
  • 2 tsp Salt (we recommend kosher salt)
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Black Pepper
  • 2 Tbsp Vegetable Oil

Directions

  1. Add the ground coffee, salt, chili powder, cumin, and black pepper to a small mixing bowl. Whisk together until combined.
  2. Pork Loin Roasts at LGCM come netted together in two halves. Cut the net open, and season each ‘half roast’ on all sides with the rub.
  3. Add vegetable oil to a large, ovenproof skillet. Heat to medium-high heat, and sear the pork on all sides until browned. After searing, place the pork in an oven preheated to 375ºF. Roast for 35-45 minutes, until the pork reaches 145ºF, internal temperature.
  4. Once the pork reaches 145ºF, remove from oven, and let rest for 5-10 minutes. Slice and serve. Enjoy!
