Coffee Crusted Pork Roast
We love coffee, and we love pork. When you put the two together, you get this amazing recipe based on a recipe from the Pork Council. Pork Loin Roasts are conveniently sized for families of 3 or more, certified lean, and easy to slice for serving. They also make for great leftovers the next day! Serve this recipe with roasted red potatoes, and a sweet fruit on dish on the side. The sweetness of the fruit will balance off the coffee rub. Let us know what you think in the comments below!

Ingredients
- 3 lb LGCM Boneless Pork Loin Roast
- 1.5 Tbsp Ground Coffee
- 2 tsp Salt (we recommend kosher salt)
- 1 tsp Chili Powder
- 1 tsp Cumin
- 1 tsp Black Pepper
- 2 Tbsp Vegetable Oil
Directions
- Add the ground coffee, salt, chili powder, cumin, and black pepper to a small mixing bowl. Whisk together until combined.
- Pork Loin Roasts at LGCM come netted together in two halves. Cut the net open, and season each ‘half roast’ on all sides with the rub.
- Add vegetable oil to a large, ovenproof skillet. Heat to medium-high heat, and sear the pork on all sides until browned. After searing, place the pork in an oven preheated to 375ºF. Roast for 35-45 minutes, until the pork reaches 145ºF, internal temperature.
- Once the pork reaches 145ºF, remove from oven, and let rest for 5-10 minutes. Slice and serve. Enjoy!
