Moroccan Kefta Kabobs: Easy Ground Beef Recipe

If you're well stocked on ground beef in the freezer and want to get adventurous with what to make, you're in for a treat with this satisfying and easy recipe!

Moroccan kefta kabobs are spiced beef skewers featuring a North African spice blend called ras el hanout. Ras el hanout means 'head of the shop' in Arabic and was understood to be a mixture of the best spices the seller has to offer. Now the mix has become a bit more standardized and features a combination of warming, aromatic spices like cumin, coriander, cinnamon, ginger, clove, allspice, and more.

For this recipe, we used The Deliciouser's Ras el Hanout blend. It's perfectly crafted to complement the fresh herbs in this recipe.

Kefta (sometimes spelled kofta) is essentially a well-seasoned meatball, and it's been a staple across Morocco and the Mediterranean for generations.

The beauty of this version is its simplicity: just a few ingredients are combined and then formed into logs. You can either skewer it or not - I chose not to because it's easier - and after a quick grill, you can enjoy an easy weeknight dinner that feels a lot more impressive than the effort it takes.

We served it with a homemade garlic yogurt dip that is 1 cup plain Greek yogurt, 2 cloves of minced garlic, a juiced lemon, a tablespoon of olive oil whisked together and seasoned to taste with salt and pepper for dipping. We served the kabobs and dip with a little bit of pita bread, carrots, and cucumbers to make a fresh, colorful, and nutritious meal!

Ingredients

  • 1 lb. Ground Beef
  • 1 small yellow onion, grated
  • 2 clove garlic, minced
  • 1 bunch fresh parsley, chopped
  • 1 bunch fresh cilantro, chopped
  • 2 tbsp ras el hanout
  • 1 tsp salt
  • .5 tsp. black pepper

Directions

  1. In a large bowl, combine the ground beef and other ingredients. Mix with yourhands until it is evenly blended and the meat starts to feel a bit tacky.
  2. Cover the meat and let sit in the refrigerator for 30 minutes while you get the grill going.
  3. Set up your grill for direct heat cooking and heat it to 400ºF.
  4. Shape the meat into 6 even sausage link shaped forms. If you like, skewer them (make sure to soak wooden skewers before using), or leave them as logs and cook them as they are.
  5. Grill over medium-high heat, turning every few minutes until browned on all sides, about 10 minutes total, until the beef reaches 160ºF internal temperature.
  6. Rest and serve with dipping sauce and enjoy!
