Chicken thighs are easy to grill and easy to wrap in bacon! After we decided we wanted to make bacon wrapped chicken thighs, we thought “how can we make this recipe even tastier?” and we settled on using putting a sweet and spicy Sriracha BBQ sauce on the chicken before wrapping it in bacon. The result was awesome! Sweet BBQ sauce, spicy Sriracha and salty bacon flavors all intermingled perfectly with charcoal grill smoke flavor. You can also make this recipe in the oven and, if you like, you can stuff the inside of the chicken thighs with your favorite cheese before wrapping them in bacon. Did you make this recipe? - 8 Boneless Skinless Chicken Thighs
- 16 slice Bacon
- 1 cup BBQ Sauce (pick your favorite!)
- 1/2 cup Sriracha Sauce
- 1/4 cup Soy Sauce
- Toothpicks (soaked in water)
In a small bowl, mix together the BBQ sauce, Sriracha sauce, and soy sauce. Lay the chicken thighs out flat and brush the Sriracha BBQ sauce on all sides. Roll the thighs up, then wrap each thigh with 2 slices of bacon. Secure the bacon on the chicken thighs and keep them closed by placing toothpicks through the chicken thigh and bacon.
Set up your grill for indirect cooking at 400ºF (you can add smoke if desired). Place the bacon wrapped thighs on the grill and cook for approximately 25-30 minutes, until the chicken reaches an internal temperature of 165ºF.
Remove from grill and take out toothpicks before serving. Serve with more dipping sauces and french fries. Enjoy!!
