Greek Grilled Pork Chops with Greek Pasta Salad Recipe

This recipe is a fresh way to enjoy pork chops hot off the grill. A simple marinade imparts a zesty, lemon-herb flavor to the pork chops that’s perfect with a pasta salad packed full of produce. This recipe doesn’t need to marinate long – just long enough to coat the chops before grilling. Ingredients

  • 6 LGCM Pork Chops (we recommend 1/2″ rib chops for this recipe)
  • 1/4 cup Olive Oil
  • 1/2 Lemon (juiced)
  • 2 Tbsp Greek Seasoning (like Cavender’s)
  • 1 lb Cooked Pasta (use rotini or penne)
  • 1 Cucumber (diced)
  • 1 pint(s) Cherry Tomatoes (cut in half)
  • 1/2 Red Onion (diced)
  • 1/2 cup Feta Cheese (cubed)
  • 1/2 cup Olive Oil
  • 1/4 cup Red Wine Vinegar
  • 1/2 Lemon (juiced)
  • 2 tsp Italian Seasoning
  • 2 tsp Kosher Salt
  • 1 tsp Black Pepper

Directions

  1. Prepare the pasta salad putting the cooked pasta in a large mixing bowl, then adding the cucumber, tomatoes, onion, feta cheese, 1/2 cup olive oil, 1/4 cup red wine vinegar, 1/2 lemon juiced, 2 tsp. Italian seasoning, salt, and pepper. Mix to combine. Set aside in refrigerator for at least 2 hours.

  2. Mix together 1/4 cup olive oil, 1/2 lemon juice, and 2 tbsp. of Greek seasoning. Place the pork chops in a gallon sized sealable plastic bag, and pour the marinade into the bag. Coat the pork chops with the marinade. Let sit while preparing grill.

  3. Heat a grill to medium-high heat. Once hot, remove the pork chops from the marinade, and place directly over the heat. Cook for approximately 3 minutes per side, flipping only once. Remove from grill once the pork chops reach 140ºF. Discard marinade.

    Note – if you are cooking thicker pork chops, you will need to grill longer.

  4. Serve pork chops with pasta salad and enjoy!
