  • 6 LGCM Pork Chops ( we recommend 1/2" rib chops for this recipe)
  • 1/4 cup Olive Oil
  • 1/2 Lemon ( juiced)
  • 2 Tbsp Greek Seasoning ( like Cavender's)
  • 1 lb Cooked Pasta ( use rotini or penne)
  • 1 Cucumber ( diced)
  • 1 pint(s) Cherry Tomatoes ( cut in half)
  • 1/2 Red Onion ( diced)
  • 1/2 cup Feta Cheese ( cubed)
  • 1/2 cup Olive Oil
  • 1/4 cup Red Wine Vinegar
  • 1/2 Lemon ( juiced)
  • 2 tsp Italian Seasoning
  • 2 tsp Kosher Salt
  • 1 tsp Black Pepper

    Prepare the pasta salad putting the cooked pasta in a large mixing bowl, then adding the cucumber, tomatoes, onion, feta cheese, 1/2 cup olive oil, 1/4 cup red wine vinegar, 1/2 lemon juiced, 2 tsp. Italian seasoning, salt, and pepper. Mix to combine. Set aside in refrigerator for at least 2 hours.

    Mix together 1/4 cup olive oil, 1/2 lemon juice, and 2 tbsp. of Greek seasoning. Place the pork chops in a gallon sized sealable plastic bag, and pour the marinade into the bag. Coat the pork chops with the marinade. Let sit while preparing grill.

    Heat a grill to medium-high heat. Once hot, remove the pork chops from the marinade, and place directly over the heat. Cook for approximately 3 minutes per side, flipping only once. Remove from grill once the pork chops reach 140ºF. Discard marinade.

    Note – if you are cooking thicker pork chops, you will need to grill longer.
