Eat healthy and delicious with our Grilled Chicken Salad with Honey Mustard Vinaigrette recipe! This recipe combines simple grilled chicken with a sweet and tangy homemade Honey Mustard Vinaigrette dressing. The freshly made dressing will bring out the hot off the grill flavor of the chicken breast perfectly. Add your favorite salad toppings to the mixture and enjoy!
Pound the chicken breasts to 1/2″ thick and season both sides with salt and pepper. This will help them grill more evenly and make for better salad strips.
Heat your grill to 400°F and cook the chicken for about 8-10 minutes per side over direct heat until the internal temperature is 165°F. Do not overcook.
While the chicken is grilling, combine the minced garlic, honey mustard, honey and lemon juice in a medium size bowl. Whisk the ingredients together, and while whisking, add in olive oil. Whisk until combined and season to your taste with salt and pepper. Set aside in refrigerator until ready to serve.
When the chicken has reached 165°F, remove from the grill and let sit for 3 minutes. Slice into thin strips and serve over the spring greens. Add tomatoes and other toppings to salad and serve the honey mustard dressing on the side for easy dipping. Enjoy!
