Fresh greens and freshly grilled food are two of the best things about summer in Wisconsin. This recipe for a Grilled Lemon Pepper Chicken Salad combines both of those things into one healthy lunch or dinner. Ingredients

  • 1 Lemon Pepper Chicken Breast
  • 1 head Romaine Lettuce (rinsed and chopped)
  • Croutons
  • Parmesan Cheese
  • Balsamic Vinaigrette Dressing

Directions

  1. Using the flat side of a meat mallet, pound the chicken breast flat until it is a uniform thickness of about 3/4″ thick. This will help the chicken grill more evenly, taste better and slice more easily!

  2. Preheat your grill to medium high heat and grill for about 10 minutes per side, flipping only once, until the chicken reaches 165°F internal temperature.

  3. Remove the chicken from the grill and let sit for 5 minutes. Slice into strips.

  4. Place the lemon pepper chicken strips on top of a bed of lettuce and add croutons, cheese and dressing to your taste. Other suggested toppings include cherry tomatoes and fresh cucumber slices!
