Combine all the ingredients except lamb in a small bowl and then rub this spice mixture evenly all over the lamb.
Place the lamb on a rack in a roasting pan and place in an oven preheated to 400°F and roast for 30 min.
Turn the heat down to 350°F and roast for about 1 hour until the meat reaches 135°F. Important! Check the temperature of the lamb after 45 minutes of cooking to make sure the lamb does not get overcooked.
Remove lamb from oven, let rest for 10 minutes and serve by cutting slices to desired size. Enjoy!
