- 4 burritos
Ingredients
- 1 lb Leahy’s Angus Top Butt Steak (or flank steak)
- .75 cup Salsa (cut into 1/8″ strips)
- Cajun Seasoning (divided)
- 6 oz Cajun Rice and Bean Mix (like our Urban Accents Cajun Street Rub)
- 2 Tbsp Vegetable Oil
- Tortillas
Directions
- Prepare the rice mixture according to the package directions, using 1/4 cup less water than indicated and no butter.
- Put your steak strips into a medium bowl and add in Cajun seasoning, to your taste, and 1/2 cup salsa. Mix together until steak is covered in seasoning and salsa mixture.
- Heat vegetable oil in a large non-stick skillet over medium high heat until hot. Add the beef strips and cook 2 minutes per side, flipping only once. You may need to cook in two batches, depending on the size of your beef. Do not overcrowd.
- Add rice and remaining 1/4 cup of salsa to the skillet with the beef. Cook and stir until beef is cooked to your taste and rice is warm.
- Spoon beef and rice mixture on to your tortillas and fold into burritos. Serve with additional salsa or dirty rice as desired. Enjoy!
