One Pot Pork and Rice

Ingredients

  • 1 Pork Tenderloin (we used a LGCM Mandarin Teriyaki Tenderloin for this recipe)
  • 2 Tbsp Vegetable Oil
  • 1 cup Water (or chicken broth)
  • 1 cup Rice (use long grain)
  • 1 bag Frozen Vegetable Mix (minute style rice)

Directions

  1. Cut pork tenderloin into small cubes. Add oil to a large pot and heat over medium high heat. Sear the pork until browned on all sides.
  2. Add water, rice, and vegetables. Stir together and bring to a boil. Once boiling, reduce heat to a simmer and cover.
  3. Cook for about 10 minutes, until the rice has absorbed the water and is tender. Serve pork and veggies over the rice and enjoy!
