- A full lamb rack of 8 ribs will feed about 2-3 people
Ingredients
- 8 Rib Lamb Racks
- 3 clove Garlic (minced)
- 4 Tbsp Olive Oil
- 2 Tbsp Parsley
- 2 Tbsp Rosemary
- 2 Tbsp Thyme
- 1 tsp Salt
- 1 tsp Pepper
Directions
- Pour 2 tbsp. of oil into a large skillet and heat to high heat. Once hot, sear all sides of lamb for 3 minutes each.
- Remove lamb from skillet and set aside. Combine seasonings with 2 tbsp. of oil and rub mixture all over the lamb.
- Place lamb in a shallow roasting pan, bone side down, resting on the bones, and place in an oven preheated to 425°F.
- Roast for 10 minutes or until the temperature reaches 130°F. Remove, cover with foil and let sit for 5 minutes.
- Serve by cutting individual chops from the rack. Enjoy with roasted potatoes and vegetables.
