Ingredients
- 2.5 lb Leahy’s Angus Stew Meat
- 16 oz Asian Vegetable Blend (frozen)
- 14 oz Coconut Milk
- .5 cup Golden Raisins
- 1 Tbsp Curry Powder
- 1 Tbsp Kosher Salt
Directions
- Add stew meat, coconut milk, raisins, curry powder and salt to your slow cooker. Stir all the ingredients together, cover the slow cooker and cook on low for 7 hours.
- After 7 hours, add frozen vegetables to mixture, stir to mix, increase heat to high and cook for 1 more hour or until the vegetables are tender.
- Once vegetables are tender, serve the beef and veggies over rice or couscous and enjoy!
