Slow Cooker Guinness Irish Beef Stew Recipe

Ingredients
- 2 lb LGCM Beef Stew (pieces)
- 4 Potatoes (cut into large chunks)
- 2 Carrot (cut into large chunks)
- 2 cup Yellow Onion (chopped)
- 1 can Guinness
- 2 cup Beef Broth
- 2 Tbsp Butter
- 2 Tbsp Flour (optional)
- 2 tsp Thyme
- 2 tsp Parsley
- 1 Bay Leaf
- Salt
- Pepper
Directions
- Heat the butter in a large saute pan, until melted. Add the beef stew meat and cook until browned on all sides. Season liberally with salt and pepper.
- Remove beef from sautee pan, and transfer to the slow cooker. Season with thyme and parsley, and sprinkle with flour for thicker gravy (if desired).
- Pour in beef broth and Guinness, and then add vegetables around the beef, finally add the Bay Leaf.
- Cook on high for 4 hours, or low for 8 hours. Add salt to taste and serve with more fresh parsley for an Irish garnish.
