Ingredients
- 1 LGCM Chicken Breast (1.5 – 2#)
- Salt
- Pepper
- 1/2 cup Orange Juice
- 6 oz IPA Beer (roughly half a can)
- 14 oz Diced Tomatoes (drained)
- 2 Chipotle Peppers in Adobo Sauce (diced – use more or less to taste)
- 1/4 cup Honey
Directions
- Pour the orange juice and IPA beer into your slow cooker. Drink the rest of the beer. Add the chicken breast and season with salt and pepper. Add the drained, diced tomatoes, diced chipotle peppers and honey. Cook for low on 8 hours or high for 4 hours.
- Once the chicken is done cooking, remove the chicken from the slow cooker and shred with two forks. Drain excess liquid from the slow cooker and add chicken back in to the pot. Mix together with tomatoes, peppers and sauce.
- Serve on top of rice, noodles or in a taco. Add a squeeze of fresh lime juice and a bit of cilantro on top to freshen up the flavor. Enjoy!
