BBQ Chicken BLT Salad
Who knew that this classic sandwich would be so good as a salad? We’ve taken the ingredients you love from the sandwich, added baked chicken, and a BBQ ranch dressing to make a flavor packed salad that is sure to be a crowd please. Feel free to add additional ingredients like sliced hard boiled egg, shredded cheese, and more veggies as you like. Enjoy!

Ingredients
- 2 LGCM Chicken Breast
- BBQ Rub (use your favorite)
- 8 cup Romaine Lettuce (chopped or torn)
- 1 cup Cherry Tomatoes (halved)
- 6 strip LGCM Bacon (cooked)
- 1 Red Onion (and cut into pieces)
- Croutons (sliced)
- 1 cup Ranch Dressing (to your taste)
- 1/4 cup BBQ Sauce
Directions
- Season your chicken breasts with the BBQ rub to your taste. Bake in an oven preheated to 400ºF for about 25 minutes, until the breast reaches 165ºF. Remove, let sit for 3 minutes, and slice.
- Make the BBQ Ranch dressing by whisking together the ranch dressing and BBQ sauce. Adjust mix to your taste, or add hot sauce for a bit more kick. Set aside.
- When the chicken is done baking, start preparing the rest of your salad. For the best mix of ingredients, hand make 4 different salads by layering the lettuce, tomatoes, bacon, onion, and croutons. Place the chicken on top of the other ingredients and top with dressing. You can also combine salad ingredients in a large bowl and toss for a less evenly distributed salad. Enjoy!
