Our Chorizo sausage is one of our most consistently award winning sausages, and the moderately spicy flavors of this sausage are the perfect addition to a classic Queso dip. This recipe is ready in under 30 minutes, and can be used for a game day snack, party appetizer, or double the recipe, and use it for a dinner! You can add even more flavor to this recipe by adding bacon or jalapeño peppers, if you desire. Enjoy!
- 1/2 lb Leahy’s Chorizo Sausage (can substitute ground beef if desired)
- 1 lb Velveeta Cheese (cut into 1/2″ cubes)
- 1 can Diced Tomatoes with Green Chilies (10 oz can like Ro-Tel)
- 4 stalk Green Onion (diced)
Heat a large nonstick skillet to medium-high heat. Remove the chorizo sausage form its casing, and cook it in the skillet until it is crumbled and browned. Drain any fat from the skillet.
Add the Velveeta cheese and tomatoes & chilies. Stir to combine the mixture, and cook over medium heat until the Velveeta is melted. Stir occasionally to keep the mixture melting evenly. Once the mixture is melted, stir in green onion, and serve with chips. Enjoy!
