One of the best parts about St. Patrick’s Day Corned Beef is enjoying the leftovers! Make a tasty, and fresh Grilled Reuben Sandwich with our easy recipe. Even better – you can enjoy this tasty sandwich year round, not just during St. Patrick’s Day!
Butter each slice of rye bread on one side, and place one slice, butter side down, on a skillet over medium heat.
Spread Thousand Island dressing over the slice of bread in the pan, and then add a slice of cheese, sauerkraut, the corned beef, and then the other slice of cheese.
Spread the rest of the dressing, and mustard on the unbuttered side of the other piece of bread, and place that piece of bread dressing side down on the sandwich. Press the sandwich firmly down with a spatula.
Grill until the sandwich is golden brown on the bottom, then flip, and grill until the other side is golden brown as well.
Enjoy!
