Meatloaf is one of the most satisfying meals to eat at home. It’s hand-shaped, rich and juicy, topped with your favorite BBQ sauce and keeps you full like a whole meal. This Keto meatloaf recipe combines everything you love about a home-made meatloaf with what you need for your keto diet, and produces a simple, delicious baked loaf of meat. We used our signature 60/40 ground beef and pork blend for this recipe, because we think it makes the perfect texture for meatloaf, but you can use plain ground beef, or a mix of ground beef, veal, and pork if you like!
In a large bowl, combine eggs, milk and almond flour. Let sit and hydrate for 10 minutes.
Add the meat, diced onion, minced garlic, almond flour, salt, black pepper, dried thyme, onion powder, and chopped parsley to the bowl and mix together. In a separate bowl, mix the ketchup and BBQ sauce.
Line a sheet pan with foil, and spray with cooking spray. Shape the meat mixture into a loaf and place in the middle of the tray. Spread half of the BBQ Ketchup mixture on the surface of the meatloaf. Place into an oven preheated to 375ºF, and bake for 20 minutes.
After 20 minutes, remove from oven, and spread the rest of the sauce on top of the meatloaf. Continue baking for another 20 minutes, or until the meatloaf reaches an internal temperature of 165ºF.
Once the meatloaf reaches 165ºF, remove from oven, let rest for 5 minutes, then slice, and serve. Enjoy!
