The Sirloin Bavette is a little known, little used piece of meat that is sometimes also known as Sirloin Flap meat. Cut from the sirloin, it’s very similar to flank steak or skirt steak, but just a little thicker and beefier in flavor. You’ll want to cut this steak into thin strips against the grain of the meat for maximum tenderness. Try using the strips for fajita meat or to serve a large dinner party!
