I hope your bellies are nice and full from your Thanksgiving festivities – whatever they looked like this year. I kept the meals this week pretty easy, in case you’re feeling cooking-fatigued at all. Enjoy slow cooker and sheet pan meals a-plenty!
MONDAY
Ok, I know I said that I kept the meals simple, but these pinwheels aren’t exactly that. But, I promise, they are the hardest option on the plan this week and that’s just because they involve a little extra love and time. Plus a great alternative option is a simple sweet and savory tenderloin.
Option 1: Cajun pork pinwheels

TUESDAY
Take your pick – cook it all in a slow cooker or try it all one one sheet pan. Both are classic chicken/Mexican recipes that everyone will enjoy. I prefer option 1 because, well, it’s more kid friendly and great to have the shredded chicken for leftovers throughout the week.

WEDNESDAY
Guess what? More sheet pan options! It’s the middle of the week and slaving over the dishwasher or sink after working all day and cooking dinner is not my idea of fun. So, when you make everything on one pan = less time and less dishes. Victory all around.

Scallops are on sale this week so it’s the perfect opportunity to try your hand at making them at home. If you’ve ever eaten a scallop, I bet you’ve had it seared and/or wrapped in bacon. These are both classic preparations that I love so much!

SATURDAY
The weekends are for slow cooking and warm food. Both of today’s recipes are just that. Again, you have a slow cooker option or you can choose to prepare a soup, which is kind of a lot like cooking in a slow cooker, but you’re developing flavors in a soup pot instead.

SUNDAY
Chicken thighs and slow cookers. That’s all you really need to know about today’s recipe options. Opt for Italian or Asian flavors or enjoy both throughout the week!
