Woah. How are we already planning out into March!? It’s incredibly spring-like outside today, but I hear snow is on the way, so we have plenty of hearty, filling meals in this week’s plan.
MONDAY
Slow cooker creamy Italian chicken
I love slow cooker meals on Monday’s because it helps make me feel like I have a little control over the day and I’m always happy to start the week off with a great family dinner.
TUESDAY
Getting creative on Taco Tuesday with a one pot meal that allows for a ton of creativity. I like taco fillings on tortilla chips, but my son will only eat soft shell tacos. With this recipe, we can both enjoy Taco Tuesday the way we like it!
WEDNESDAY
Beer braised bbq country style ribs
These are not the ribs you’re thinking of! To get all of the flavor from this dish, make sure you’re cooking it low and slow.
THURSDAY
You’ll likely have leftovers from the start of the week, but plenty more to come – on Saturday especially.
FRIDAY
Halibut with Asparagus and Olive Caper Sauce
It’s still winter, but that doesn’t mean we can’t be dreaming of summer. Halibut is a great fish to cook simply. Plus, for our friends that aren’t eating meat on Fridays, this recipe is a great one to try.
SATURDAY
This is a great weekend recipe because a bit of time to make, but will leave you with SO many leftovers to enjoy throughout the week. You can even enjoy this turkey with friends on Saturday night (and still have leftovers), so try smoking a turkey to eat all week long.
SUNDAY
You can’t go wrong with a family recipe that has lasted generation after generation. When the Sunday scaries creep up on you, sitting down with a warm bowl of soup provides a nice bit of comfort.
