This week is full of food holidays, which are our favorite to celebrate! We know they’re made up, but they sure make it easier to help us decide what to eat for dinner.
MONDAY
It’s Memorial Day, so we’re grilling out (let’s hope the rain holds off!). It was difficult to pick just one grilling recipe, so we stuck with a classic; a perfect burger. Personally, I love avocado, lettuce and ranch on a burger – weird, maybe, but it tastes fresh and delicious!
TUESDAY
Enjoy a fresh take on taco Tuesday with shrimp tacos…and more grilling! Don’t worry, you can also cook the shrimp in a frying pan. No matter how you cook it, this lighter take on a classic taco will have you thinking you’re somewhere warm in no time.
WEDNESDAY
Slow Cooker Italian Beef Noodles
Do you know what today is, besides Wednesday of course? Well, it’s National Italian Beef day! That’s right, time to celebrate with this homey, comforting dish. Or if sandwiches are more your style, opt for a classic Italian Beef classic with peppers and mozzarella.
THURSDAY
No leftover day this week (although, we’re still sure you will have some!) because it’s National Brisket Day! Yes, that’s right, another food holiday this week.
FRIDAY
Mahi-Mahi with Lemon Butter Sauce
A classic mahi mahi recipe that is great for a quick and easy seafood dinner. Oh and even if you don’t want to make mahi-mahi, you don’t miss the Dad joke at the start of the recipe! Nick’s become pretty good at those these days.
SATURDAY
Spicy Buttermilk Fried Chicken
What’s not to love about this one?! Spicy and fried! I haven’t tried frying my own chicken very often, but I do love a good fried chicken, so here goes nothing.
SUNDAY
Sunday is the perfect day for brunch, if you ask me. Lately, I have loved my slow mornings with my oldest kid in the kitchen with me. He’s 4, but loves chopping and helping, so he gets to cut veggies and I’ll finish the meal. This quiche is the perfect Sunday recipe.
