Weekly Meal Plan

A few of my favorite things are in this week’s recipe plan; a salad with chicken, a one pot dish and breakfast for dinner!  I’m using this quarantine time to explore some different food items and cooking with my son in the kitchen.  And a great hint for this week – Sunday’s dish is a great one to make with kids!

Sunday Meal Plan

MONDAY

BBQ Chicken BLT Salad

Take those delicious BLT flavors and remove the bread (you can add a little bread by using croutons).  I love the BBQ ranch dressing and like to add a little spice to my salad by using a spicier bbq sauce.  I would also top this salad with some tasty tortilla strips instead of croutons.  Play around with this salad and see what works for you!

TUESDAY

Fajita Chicken Mac & Cheese

Spice up your typical mac & cheese by putting a Mexican twist on things!  These aren’t quite tacos, but you can’t go wrong with Mexican flavors in your macaroni – YUM!

WEDNESDAY

Pesto Rubbed Tri-Tip Steak

We’re big fans of pesto in our household.  What about you?  This dish is full of flavor and will have you dreaming of outdoor dining all year long.

THURSDAY

FRIDAY

One Pot Shrimp and Orzo

Only one pot and on the table in under 30 minutes – what more can you ask for in a dinner?  If you or your family isn’t a fan of shrimp, try the dish with chicken instead.

SATURDAY

Grilled Pork Chops

We love spending weekend days outside with the grill.  And Nick’s advice to a perfect pork chop – “cook a pork chop like a steak!”  Take a look at the recipe for tips on how to grill up the perfect piece of pork.

SUNDAY

Crustless Quiche

Breakfast for dinner; a classic favorite in our house.  Although I love a good pancake for dinner, this dish is much healthier and heartier.  Since it’s Sunday, feel free to use this recipe as breakfast, lunch or dinner!  And make some extra to have a healthy breakfast throughout the week.  You can get creative with whatever meat and veggies you have in the house.
